Monday, January 25, 2021 - We found the perfect pairing: Petrale sole with capers, butter, white wine, pearl onions, and parsley. This wine paired perfectly with that dish. The wine’s fruit and acidity have come into perfect balance now in 2021. We drank the rest of the bottle the next night, and it had clouded up a bit even though we pumped the bottle and restored it in the cellar. Drink now through 2022 at the latest.
