Friday, April 25, 2014 - Garnet color, almost transparent. on the nose a burst of bright peppered cherries. ripe strawberries. on the palate, smooth fruit-led flavors (strawberry puree) and some coffee and spice. med+ acidity, oak-driven tannins (med plus) lip smacking strawberry finish. grapes destemmed and crushed and must sent to tanks for three day cold soak, allowing primary extraction where water acts asa solvent and breaks down the cell walls of the grape solids, extracting flavors, color, and aromas. feremntors drained and returned three times, resulting in more extracting than just pumping over the tanks. gentle pressing, wine aged in combination of Hungarian french, and american oak for 16 months. clove and vanilla flavors. plums and juicy blackberries.
