Sunday, July 25, 2021 - An hour in the carafe to open up. Aroma of ripe lemons, yellow apples, great minerality with limestone and flint, salty sea, hazelnuts. A typical chablis on the nose. The palate, though, is what impresses me the most. Steel like acidity, phenomenal fruit concentration, salty, energetic, very long. A relatively rich style, but everything is in beautiful balance. Delicious, fresh and refreshing on a hot afternoon on the terrace.

I notice that some people have expressed concern about the cellaring potential for 2014 white Burgundy and Chablis due to the high acidity. Well, I do not share an ounce of this concern. The underlying fruit in the vintage is so incredibly beautiful with a very high concentration, and the 2014 fruit will have zero problem balancing the 2014 acidity for a long time. This wine is only at the beginning of its drinking window, but due to a slightly obsolete bottle last year, I did not dare to wait any longer with this one. Unfortunately my last bottle, but I would very much like to taste this again both 5 and 10 years down the road. 2014 shows again that this is a great vintage in Chablis! 91 points
