Friday, October 26, 2012 - Private Chef Dinner at Yann's New Place (Flatiron, NYC): Pure ruby, maybe an edge of brick. Extremely deep, gutty, gouttey, spicy sauvage nose. Wild rose and general redness everywhere. Iron filings, foundry smoke, and a bare hint of cocoa. The palate is wonderfully balanced, still a bit tight and firm. More sauvage rosy perfume, Wagyu beefsteak, salinity. Really finely grained and well bred. Excellent, not great, length. Frankly, this could use 10 more years. A wonderful treat!
