Wednesday, April 8, 2015 - Dinner with Nick and Wayne: Colour pale pink, turning rusty. Served in a Riesling glass. Persistent bead of small bubbles. Fairly subdued bouquet of strawberries, orange zest and fresh salmon. There is very limited autolysis on the nose. On palate, this is a gorgeous, high quality Champagne. A complex flavour profile of strawberries and other red berries, citric notes, clotted cream, fresh salmon and savoury elements. There is a lovely, fresh core of fruit and the flavours are beginning to move secondary around that core. The Champagne is not very leesy, and is more of a wine than a Champagne. It has absolutely gorgeous acidity. It seems to be within its optimal drinking window although it will become more interesting as it moves more secondary in the next few years.
