Wednesday, November 1, 2017 - Dinner with Blair Pethel (Chicago, IL): My favourite of the two 2015 Chassagnes -- this was much more suited to my palate. The story of the day is very dense minerality, as well as a fruit profile that seems a little more subdued or clamped down. I love the intense mineral extract here. It feels like it sticks to your palate. The ripeness of the vintage does show through in a little bit of butterscotch on the nose.
