Monday, December 5, 2011 - With Troisgros inspired Salmon with sorrel this thing was the bomb. It has intensity and restraint and has all sorts of engaging, subtle aromas of citrus fruits, blossoms and pure white peach. It has a light dairy note that works well with the creamy sauce of the dish and has great shape. There’s a suggestion of tangerine and good citric cut, mirroring the tartness that the sorrel imparts to the sauce. It has good cut to the finish and leaves a rich and heady imprint.
