Monday, January 14, 2019 - Drank this over an afternoon and the development was impressive. Started out thin with distinct lemon flavor and limited nose. After four hours, it produced tart, round tropical fruit flavors focused around pineapple with some minerality and nicely balanced acidity. A fine accompaniment for homemade bread with good butter and salt and ,astonishingly, went well with some split pea soup. The acidity and citrus notes balanced the rich smoky ham flavors of the soup.
