Sunday, December 17, 2023 - Purchased a few bottles at auction. Yellowish gold in color with a aggressive stream of small bubbles. Lovely nose of funky yeast, caramel, lemon oil, seashells, saline, honey, white flowers, and as it opens up green apples/pears develop.

High acidity, structured, a bit buttery, and plenty of lift on the tongue. Palate of pears, green apples, lemon oil, mild caramel, and mild pie crust. Long chalky finish with lemon, yeast, tart pears, saline, seashells, and some caramelized green apples. There's a buttermilk like twang at the end of the finish.

Interesting bubbly. If you are looking for light and clean, this ain't it. Funky with a decent amount of weight to it. Glad I have another bottle.
