Saturday, September 21, 2019 - This was pure fire! Slightly reductive on opening, as it should be. The nose was pear, apple, flint, salt, chalk (how?), and lemon. The palate had this Jeckell and Hyde duality of laser like precision and richness - it seemed to bounce between the two at various times throughout the evening. The acid was perfectly balanced and mouth-watering. The finish, long and pleasant.
