Monday, May 1, 2023 - Quite pale and bit muted to start. Served cool. This really blossomed over 3 hours or so. Super balance and persistence. Really complex with ever changing notes of undergrowth, smoke, cherry, spice, Christmas cake and more. A real delight. Worked well with a creamy pasta & bacon dish too.
