Tuesday, December 24, 2013 - Light golden color. Quite reserved on both the nose and palate at first. Within an hour, the wine became much more expressive - beautiful nose of minerals, spices and citrus. Apple, wet stones with a honey element on the palate. Great balance so plenty of life ahead. An excellent pairing with the crab cakes and certainly a great addition to Christmas Eve dinner.

That being said, the '05 Raveneau Chablis MDT certainly has the structure and acidity necessary to age another 10+ years assuming proper storage conditions. No evidence of premox here or in any of the bottles of Raveneau I have had the pleasure of drinking. Merry Christmas to you as well!
