Thursday, August 1, 2019 - Had over three nights. Definitely evolved - though not oxidized - compared to the previous bottle about a year ago. Much more honeyed, ripe-tasting, and secondary than before on the first night, with less apparent salinity and acidity. By the third, it had tightened up considerably, with more sharpness and pronounced minerality. I’ll keep my remaining bottles for a while, and give them plenty of air/time when I open the next one.
