Tuesday, April 12, 2022 - Had with smoked salmon in pasta with cheese. Volatile, with grassiness and gooseberry. Some color drift towards honey, but not much. Obviously, very very long in the tooth. On the other hand, it is remarkable how Chalk Hill sauvignon blancs hold up (or at least used to). Fascinating to drink and reflect on the evolution of this wine.
