Saturday, May 8, 2021 - Opened at Angler in SF for my wife's 40th over Mother's Day weekend.

May be the best aged (aged 35+ years) Champagne I've ever had. The Somm had the giddiest of smiles when she popped the cork and when she poured us our first glass, I understood why.

The effervescence lasted over 2 hrs, the primary and secondary notes were still very present on the nose and even more so on the palate. Crisp, vibrant, acidic with some notes of lemon peel and green apple. It was so we'll balanced and in tune with itself. Pretty much the perfect expression of champagne. The "flavors" we're not fighting each other, everything was in perfect harmony.

If the bottle has held and not damaged due to heat and/or oxidation (as I feared it could be), it is absolutely in the most perfect of drinking windows right now!

Side note: I may have ruined my wife's champagne palate and my wallet all at the same time.
