Thursday, May 18, 2023 - Beautiful grassy notes on the nose with a strong limestone kind of mineral character. On the palate it’s beautiful linear and acidic although slightly lacking in depth. Light and fresh green apple and pear flavors were beautiful along with a continuation of the characteristic Saint-Aubin minerality. While this wine was slightly lost in the shuffle with the over more illustrious wines we had that night, it was a beautiful start to the evening and paired amazingly with the big eye toro toast with caviar at Republique. This wine still has a lot of life and will probably reach its peak near its 10th birthday. Overall: 91+
