  • 13% alcohol. Hard wax top, the kind that shatters upon piercing. Superb very long cork, one of the best that I have ever seen. Decanted 30mn ahead because I remembered this wine being quite tight when I last encountered it two and a half years ago. The colour is pale straw with even a suggestion of a green hue; well this is good to see as it means no oxidation.
Very pure nose with white flowers, some understated yellow fruit and a (pleasant) hint of sweat. Similar in the mouth with excellent grip and perfect acidity; on the negative side, there is a severe deficit of fat and comfort in this wine. So what are we left with: a Côte de Beaune which veers towards Chablisian austerity without matching the effortless elegance of that area ? A bit of a mongrel in my view, so you will have to accept it on its own terms, and it has plenty to recommend it.
The main reason why I am somewhat negative on this bottle is because it did not do justice to the accompanying lobster.
PS I see from my previous note that the food match did not work the last time either, so the blame is on me (perseverare diabolicum).

  • Stone fruit citrus, and some oak which softerens the bracing acidity. Long finish

  • A bright straw color. Not showing much age despite 6 years in bottle. Nose of white orchard fruit, citrus, and a touch of oak and spice. Some tropical notes as well but contained. On the palate this has concentrated and precise citrus and green apple flavors and then a chalky dry extract along the mid palate. almost sappy. Lifting and precise acidity gives the wine great freshness and lift along an effortlessly powerful and full flavored finish. Really excellent and has a long life ahead of it (although is a joy to drink today).

  • Lovely light gold with green. Bit of light floral notes. Keen acidity. Plenty of fresh citrus, lemon and grapefruit. Some chalky minerality. Great balance. Real liveliness. Medium plus length. Very good St Aubin, lots to come yet.

  • Beautiful grassy notes on the nose with a strong limestone kind of mineral character. On the palate it’s beautiful linear and acidic although slightly lacking in depth. Light and fresh green apple and pear flavors were beautiful along with a continuation of the characteristic Saint-Aubin minerality. While this wine was slightly lost in the shuffle with the over more illustrious wines we had that night, it was a beautiful start to the evening and paired amazingly with the big eye toro toast with caviar at Republique. This wine still has a lot of life and will probably reach its peak near its 10th birthday. Overall: 91+
