Saturday, April 9, 2022 - My 2nd or third bottle of this vintage. Popped and poured tonight. Beautiful nose of flowers, peaches, apricot, lemon and a slight hint of signature German Riesling petroleum wax. Bright sharp acidity but not as piercing as before. The initial fruit doesn't last on the palate and quickly descends into a realm of stony minerality with an interesting and semi intense savory finish. The additional years of aging has helped, and I think this has way more room to evolve further, but is so difficult to resist now. It's not as complex and vibrant/spicy/intense as Cuvee St Catherine, but it's a very solid baseline for this Schlossberg. I do not recommend this with sushi, but do think it will work nicely with a variety of richer seafood and to a very small extent, duck.
