Sunday, June 19, 2022 - From a one Michelin star restaurant's wine list, half bottle. The menu listed this as Cuvee St Catherine, but when it arrived it was actually this baseline non Cuvee version (yikes, these are two different wines! But oh well, solider on). A bit too chilled and in a weird dull phase where throughout the duration of the meal, there was very little evolution. Such a stark contrast to the regular sized bottled from 2 months ago. You could faintly smell the fruit which was more apparent from a regular sized bottle I had not long ago. 3/4 of the way through, the most evolution of the bottle did not lead to any new discoveries nor change to become more complex. Definitely more savory and mineral driven and dry. I am not sure if this particular half bottle would have improved a whole lot even with a decant. Unfortunately it was not a great pairing even with poached oysters in a rich sauce, and also seared scallops (which was a big surprise). Perhaps a variation, or this needs upwards of 10 years aging (literally 2027) for this particular bottle for it to show something better. Perhaps this is just like certain Chablis 1er or grand cru...drink it young for freshness if there is ripeness, avoid the dull phase, or let it sleep for 10+ years
