Saturday, March 13, 2021 - Happy birthday Riesling (Justin's, Logan Square, Chicago IL): This was decanted in the fridge for a few hours and it really blossomed with deep tones of saline, pears, apples, crushed rocks, flint, white flowers, stone fruits, and peaches. There is a lot of purity and layering to the tones that melds together beautifully already. The Medium/full bodied feel is balanced and poised with tart, high acidity. This is a tremendous Riesling already and there is more room for it to grow. This will need the better part of 3-5+ years to get to its early mature stage.
