Friday, December 4, 2020 - Schwa DIY (Chicago, IL): "sea trout: cucumber, licorice, sichuan" Very bright and sappy, with a somewhat vinous quality you don't tend to find in white Burgundy. The fruit is riper and on the yellow/brown side of the spectrum, but that's not to say this isn't fresh and vibrant. For my palate, this got better with air and actually seemed to pick up even more vibrancy. I'm not sure about ageability of these wines, but a generous amount of air seems to be most beneficial for consumption these days.
