Sunday, March 10, 2024 - This was at its best after I slow ox’d it for about four hours. I sipped it every hour along the way and it definitely needed the air to come into balance. Not that it wasn’t good earlier, but it was really special after the air. I could easily have drunk it right away but I’m glad I waited. Nose of cherry, plum and some exotic spices. Palate, beautifully balanced, with well integrated and very smooth tannins, lovely fresh acidity, really nice red and dark fruit and spice. Some very enjoyable sweetness mid palate that turned tart into the finish, which lasted a long time. Drank this with roast duck, which was perfect.
