Friday, January 5, 2024 - Enjoyed tonight with oysters on the half shell. What a perfect match! Small bubbles, yellow fruit, peach and mango, salinity in check with white pepper finishing on a steely minerality which was just perfect with the oysters. This one was opened alongside a 2002 Dom Perignon, and I think that this 2008 Vintage Billecart gave the 02 Dom a run for its money.
