Tuesday, February 26, 2008 - Popped and poured into decanter.

Initial notes:

Color: Garnet
Aromas: Cherries and earthy smells of dried leaves, hints of dried mushrooms, some mint and oak.
Taste: Sour cherry up front. Rhubarb in the middle that are met with some light tannins on the finish.

After 30-45 minutes:

Aromas: The earthy smells have given way to a floral, herbal scent, spice and oak.
Flavors: The sourness has faded considerably. No longer tastes like rhubarb, but now tasting like unripe cherries.
Finish lasts 30 seconds with some lingering tannins that hang around a bit longer.

This continues to improve over time. I would give this 90-120 minutes in a decanter. After 90 minutes, I'm getting chocolate notes on the palate.

This should sit for at least a couple more years before tasting again. This has potential to be a very, very nice wine.
