Monday, August 22, 2022 - Pico usually harvests late, and does not add sulfites at pressing, and barely uses sulfites at bottling. The result is a wine of excellent terroir expression, mixing maritime oyster shell influence, poached pear, with good phenolic ripeness, and ending in a chalky oyster shell infused finish with good lenght. This is a food wine, it is not self sufficient, it needs seafood.Would pair well with oysters, salmon roe, shellfish, wakame salad and the likes.
