Cooked for 7 hrs on low. Started with brisket
Paste of garlic, cilantro , chili chipotles( adobados), cumin, oregano and chili powder
6 oz Mexican beer and 6 oz beef stock
With cojita and queso frijolero with sour cream
Wine. 2014 Sierra de Gredos Pegaso Barrancos de Pizarra Cabreros

Bright red berry and cherry. Some earth notes. Brisk acidity and crispness. Sweet on the finish
