Monday, February 12, 2018 - Not mature yet by any means but not closed down either and nicely showcasing the richness of the 1999 vintage. If your idea of Cailles is the lighter, more elegant wine in the Chevillon lineup, this will confound it. This is thick, dense stuff with quite the heavy footprint. Not that you would confuse it for Vaucrains or anything - the texture is still friendly. Dark plummy fruit gives way to lots of gravel and earthiness on the back end after it's had time to breathe.
