Monday, February 27, 2023 - Classic chablis orchard fruit and acid on the nose, adding in more layers of apple (honeycrisp? definitely on the riper sweeter side of flavors) and apple blossoms on the palate, with a little bit of unctuous texture to add some depth. Day 2 there was more telltale chalky minerality coming into the mix. Thoroughly enjoyed it, but this could keep going in a cellar for a while.
