Wednesday, September 4, 2019 - No formal notes taken as we drank it over dinner at a restaurant, but I wanted to note that it's still a baby in the tannin department. Even though it was decanted for about 2 hours and tasted wonderful, I wouldn't peg it as in its optimum drinking window yet - it's likely to open up in 3-4 years. It's a bit tight at the moment in a way that the flavors and structure are still a bit underdeveloped.
