Friday, January 27, 2023 - Traditional Y’Quem nose of honey blossom, burnt tangerine, and crème brûlée. Keeping bottle chilled until the table’s entrees were served, uncorked while temperature begins to rise. Probably needed more “air” time before being consumed though mild citrus, pineapple, and soft apple begin to appear on one’s palate. A tour de force, matched with a chocolate based tart brought out the viscous nectar of the aforementioned fruit. Would suppose it could mature further, but delicious right now.
