Monday, November 13, 2023 - Decanted off the sediment into an aerating decanter, ran back into bottle after rinse. Expressive nose with lots going on - mostly good. Flavors bright, acidity appropriate. Overall a very good wine with a few off edges in the background. Had this stored 1 degree over the recommended 14C... Applaud the no-sulfur effort as something fun to explore. Note - after 2 hours open this has become sour and acidic on the palate, last glass dumped.
