Wednesday, June 7, 2023 - Bipolar wine. Wonderful nose greets you, but on first sip after PnP, it's lumbering, oaky and a bit monolithic. I got Petit Syrah vibes. It continues like that for about 30mins, until suddenly it starts to evolve and becomes this sprightly thing, full of vigor! Ends on great note, so prob best to decant for a good hour before serving.
