Tuesday, December 12, 2023 - 100% Chardonnay
sourced from various communes in Chablis sustainably farmed.
Pneumatically pressed. 5-7 day cool maceration.
Alcoholic and malolactic fermentation in stainless steel vat.
Aged 9 months in stainless steel.
13% Abv.
Background: Domaine established since 1815. Wines made by
Samuel Billaud up to 2014 when acquired by Domaine Faiveley,
which keeps it under separate management.
Winemaker: Olivier Bailly

A(ccuray)=2: Pale straw/gold, green tint. Crisp pure varietal.
B(alance)=3: Modulated components in harmony.
C(omplexity)=2: White tree fruits, citrus, brioche, mineral.
D(epth)=1: Savory mouthfeel. Good length and finish.

Wine Tally Score [2,3,2,1]= 8/10

Previously tasted on 9/10/2022. Consistent notes, only this time
the purity, savory and minerality became more remarkable.
