Thursday, April 4, 2024 - Absurdly good wine.

Had at a tasting dinner with my husband. Mostly seafood options (scallops, escargot, tuna, etc) and other than the escargot - it paired perfectly with everything. It was definitely the best paired with the tuna, but all the others were lovely.

The wine is still young (which I normally wouldn’t say regarding a Chardonnay), but Aubert is one of those wines that seems to be lovely at any point of its life.

Tropical fruits (melon stood out the most for me, but my husband didn’t get that at all), orange zest, and a hint of floral. Perfect acidity and balance.

Didn’t decant. Kept at cellar temp (55) until we opened at dinner then it stayed cool in a chiller bucket.

    4/5/2024 9:35:00 AM - Great note, and agree with you about this wine (including that it will improve with more bottle age, not that I’m likely to be able to follow my own advice). As an Aubert aside, the second time I had this wine it was against a ‘17 Lauren, and as much as I liked this, the Lauren blew it away, IMO. If you can get hands on that, I recommend it.

    As a more unrelated aside, love the photo with Alex (I’m thinking the other person is Graeme, but I haven’t met him so don’t know). One of my great wine experiences was sitting on Alex’s porch on a beautiful Napa spring morning sipping the ‘19 with him. I may never ascend the mailing list, but that was a wonderfully memorable event. Cheers!

    Yes, that is Alex and Graeme MacDonald. Two amazing humans that make the best wine in the world (in my opinion). They really are the best.
