Tuesday, January 2, 2007 - Better acidity on this one, but not much else. Simple citrus plays to the crowd in the front with wild yeast in the back for character. Good, steady stream of small bubbles and that great clarified pale salmon color. As my drinking buddy used to say, "the most inoffensive Champagne around".
