Thursday, November 30, 2017 - Over the past decade, Veuve Clicquot Brut NV has been all over the map. Ranging from exceptional to little more than poor man's Prosecco. With the latest iteration, there seems to be a consistency and style present again. Thank you to the new chef de cave.
1. From the latest disgorgement of 2012.
Upon opening nose of saline, burnt apple, lime. Slightly cold.
2. Opened for an hour at room temp.
The nose brought slight hints of marzipan, hazelnut, tender apple, Orange blossom. The palate was fresh, full, exuberant, and bright. A full bodied wine envelopes the palate and then you taste brioche, oyster mushroom, pear. Really fun and complex.
3. A slight but interesting finish of oyster shell, apple, and citrus.
The bubbles crisp and long.

I am hoping that this style can remain steadfast and present. This style beings forth regality, freshness, and complexity.
