Saturday, March 6, 2021 - Comprised of 100% Cabernet Sauvignon, the 2000 Don Melchor is still enjoyable, but is likely past its plateau and in slow decline. This pristinely cellared bottle was decanted off of its heavy sediment and serially tasted over 3-4 hours. With a deep garnet robe and brick rim, it unfolds within the first hour to reveal an aromatic package of stewed plums, mulling spices, bittersweet chocolate, espresso, leather and dried earth. Full-bodied and with good acidic energy, it delivers flavors in line with the nose. The oak is nicely integrated at this point, as is the alcohol (13.5%). The wine's tannins take over on the mid-palate and are pervasive throughout the lengthy but grippy finish. If you have this in your cellar, I would recommended against procrastination with respect to popping the cork, as the tannins appear to be winning the war with the fruit. Drink now.
