Sunday, May 23, 2010 - Another enjoyable bottle of 97 Caymus. 2 hour slow ox, then 1 hour into decanter prior to consumption. I have had this wine many many times and always seek it out when it is at a reasonable price. Serge and I cooked up some T-bones which was the perfect compliment. This wine continues to improve and provide total pleasure. The nose was a full bouquet of cherries, blackberries, a hint of earthiness. Once in the mouth, the secondaries are very evident, black fruit, leather, a bit of oak as the flavors were quite integrated and worked in harmony as it filled my mouth. The finish was incredibly long. Longer than I remember it. This is a classic Ca. Cab without the major fruit bomb attitude. The only bad part is that this was my very last bottle but I will seek out more when the opportunity arises. This wine never failed to deliver in all the years I have been drinking it. HIGHLY RECOMMENDED A+++
