Monday, May 6, 2019 - Color: Deep ox blood, bricking, watery edge
Nose: Initial notes of iodine, blood (iron) and minerals, complemented by plum, leather and grilled peppers; after an hour decant the primary notes are ripe plum and red raspberries with the green pepper giving way to mint.
Palate: Beautifully ripe cherries and plum, licorice on the mid-palate, mouth-watering acidity (very fresh) and a very long finish with citrus rind. Tannins are fully resolved. Very polished mouth feel. Gained weight with air, more ripe plum but still great acidity. After 2 hours a rich ripe berry mix - sweetened considerably with beautifully concentrated fruit.
Overall, outstanding! I had been partial to '94 Cali Cabs over '97 and true of Caymus, in particular. This is my last '97 Caymus. I was stunned by how much better this is with the extra age. I bought on release and have stored in climate controlled cellar since.
