Saturday, December 26, 2009 - Lots of quince, apple, and pear on the nose. The palate is quite malic with a spine of fine acidity running through it. Resolutely tart, salty, and dry, it does have a curious bitterness on the finish, probably as a result of the carbonation, which makes it quite interesting. Wish I bought more.
