Friday, January 8, 2010 - Golden yellow color in color. Aromas of chalk and orchard fruit dominate the nose, with a fainter yeast note. On the palate, finely beaded and vigorous, with sour red apple flavors providing counterpoint to the palpable chalky character that carries through from the nose. The dry extract of the chalk lingers on the palate for minutes. A very distinctive and original rendition of a sparkling wine, with a trace of crisp fruit sweetness emerging only on the chalky finish.
