Thursday, May 17, 2012 - This was quite lovely. Straw color not suggesting an aged wine. Nose of saline, lemon wax, cream cheese, touch of dried flowers. Rather weightier on the palate than expected. Deep lemony both chalky and creamy, with rounded off acidity. A bit of minerality though more of a sea washed rock. A tinge of nuttiness developing. I had with boiled shrimp first night, and second with crabcakes and tomato caprese salad which really paired well. Would also be nice with mussels more so than oysters.
