Friday, March 29, 2024 - Bought a few bottles despite the hefty price tag and wanted to open one up to taste the vintage as a new release. Very approachable and too easy to quaff! That beautiful cheese rind mixed with grounded almond paste and flowers aroma upon opening the bottle was so enticing. With pop and pour, phenomenal layers of apple, apple skin and core, more floral aromas, nuttiness and spice. The wine evolved for the duration of a meal, and was best for about an hour. Towards the end of the bottle the wine lost a bit of fruit (although easily replenished with topping the glass off) and there were more texture and savory components that came forth, more elegance and smoothness. Looking forward to its further evolution with time in the cellar. A very lovely premium Chablis village, you get what you pay for. Excellent wine with food, and also very enjoyable on its own. A shame many only focus on 1er or grand cru for social media flexing and think there's no QPR with the Petit or Village....
