Tuesday, November 26, 2013 - Update: forgot about this bottle, vacuvined it and opened 2 days later. And I was surprised in that time, the entire flavour profile had really opened up. It felt hollow in the mid palette upon opening after a 1 hour decant. But by day 2 now, it had become quite lush, rounded and full. The nose was probably more muted and still with some grippy tannin. But a very nice wine.

Again that's what I find so fascinating about wine and its evolution. Just a mere day or 2 in the fridge can rapidly change its expression. Sometimes a decline and in this case something open and full.
