Monday, April 9, 2012 - At this point, the wood influence is beginning to take over as the fruit dies out. Toasty creme bruleé and hazelnut nose with faint pear. Some honey and light marshmallow with a suggestion of browned butter. Creamy on the palate with a lot of wood notes. Poached pear and crusty, brioche with hints of cinnamon, brown sugar, and other baking spice. Finished on a toasty, nutty tone. Retains pretty good acid throughout.
Drink now. Like, NOW!
