Saturday, December 18, 2010 - 12% alc. 65% Pinot Noir, 35% Chardonnay. 75% Grands Crus and 25% Premiers Crus. Nutty, deep aromas lie behind lifted notes of hyacinth. Total equilibrium on the nose. The palate demonstrates signature oxidative style of Bollinger, which is magnified by the density and richness of baked apple and nutty flavours which are however supported by invigorating citrus freshness. Perfect distribution of weight on the palate, followed by a full finish, deep and lingering, with mineral notes. A classy Champagne with a remarkable integration of flavours. Tasted at home
