Saturday, March 26, 2022 - This was well stored in 55F cellar, but it's now in decline. The Roussane has taken a baked apple character with toasty pie crust. Oxidation is evident but not overwhelming. Paired with lobster/shrimp bisque - the wine's fruit came to the fore, balancing rich bitterness from the lobster shell stock & medium toast roux in the full flavored bisque. Oxidation dissipated over the course of 2 hours & the wine became more enjoyable on it's own, but it's not like a fresh CdP blanc anymore. Pair foods accordingly.
