Saturday, October 1, 2016 - More softness, finesse in first glass, with a widely ranging palate of lemon, apple, yeast, and crusty bread, and even some slight fruit sweetness. With air an anisette note develops in the core of the bouquet and tends to dominate a palate of hazelnut, a shale-y minerality, and more crusty bread - pleasant, but just a touch more sherried than I had wished. Still, delicious.
