Friday, June 18, 2021 - Afternoon quickie at Joo Chiat. Drank in Zalto Burgundy glass.
Appearance is clear, medium+ intensity, with aromas of reductive funk, briny tidal pool, green apples, P says nettle, some emerging honeyed citrus fruit. Developing.
On the palate, dry, high acidity, medium alcohol (13%), medium+ body. Pronounced flavour intensity, with flavours of nice tart green apples, citrus lemon-limes, tidal pool brine minerality, wet stony minerality, touch of honey emerging. Long sticky lingering finish.
Very good quality. Well-aged and still feels like it could develop a bit more - once it gets the full on honey nutty notes this will be fully at peak. Could be a risk, but maybe 2 years more.
