Monday, June 12, 2017 - Bubbly at Green Street Smoked Meats (Chicago, IL): By all accounts, baby Salon. The nose and palate showed quite strangely, and there was a persistent dill note that was really hard to understand. Not oxidized or over the hill, this was surprisingly fresh -- it tasted like good old white Burgundy with bubbles -- just a hint of mushroom, no nuttiness, and very little of those old white wine flavours. I would have enjoyed this a lot more if I could get over that weird dill tone.
